Description
Transglutaminase are enzymes that in nature primarily catalyze the formulation of an isopeptide bond between y-carboxamide groups of glutamine reside side chains and the ɛ-amino groups of lysine residue side chains with subsequents erelease of ammonia. In commercial food processing, transglutaminase is used to bond proteins together.
